Are Corn Tortillas the new gluten-free bread substitute?

corn_tortillaWith FDA approving [April 14 2016] folic acid fortification of corn masa flour, will we now see a wave of new products competing head to head with fortified bread products?

The new ruling allows “manufacturers to use folic acid as an optional ingredient at specified levels in breakfast cereals and certain other foods, such as infant formula and medical foods, so that it is easier for people to get enough folic acid in their diets.”

In other words you can add up to  0.7 milligrams of folic acid per pound of corn masa flour, and still be considered a safe product.
